Start with Pyra (Fire)—a spicy tequila riff on the margarita that finishes with a candied jalapeño and tajín-sugar rim. Gaia (Earth) introduces tropical complexity with cinnamon-infused Goslings rum and pineapple, while Synephos (Crown) layers whiskey with peach schnapps and a dreamy house-made peach foam.

Gin lovers will gravitate toward Kypello (Goblet)—a Mediterranean G&T with hay-infused gin, grapefruit, and a medley of fragrant spices. For something bolder, Briki (Greek Coffee Pot) blends vodka, Kahlúa, oat milk, coffee boba, and lemon oil in a striking nod to the Greek tradition of after-dinner coffee.
