Amada and Village Whiskey update their menus under Chef Jose Garces — Spanish tapas and Southern comfort across two Philly concepts, plus an expanded happy hour at Village Whiskey.

Amada and Village Whiskey have both rolled out new menu items in Philadelphia, with Executive Chef Jose Garces updating both concepts simultaneously. At Amada, the additions lean into bold Spanish flavors and seasonal ingredients. At Village Whiskey, the new dishes go Southern-inspired with shareable plates built for bar pairings. Together, the two menus give Garces’s Philadelphia portfolio a spring refresh that covers everything from herb-crusted hake to chicken fried steak — and a happy hour expansion that adds sliders, salad, and cocktails to Village Whiskey’s late-afternoon lineup.

New Dishes at Amada from Chef Garces

The Amada and Village Whiskey updates start with the Spanish side. Amada’s new selections include Merluza al Pil Pil — herb-crusted hake with pil pil sauce, lemon, and parsley at $19 — and Bistec de Carnicero, a Creekstone hanger steak with nora butter, guindilla aioli, and chimichurri at $23. Torreznos brings crispy marinated pork belly with guindilla aioli at $22, and the Camarones delivers roasted jumbo prawns with mojo verde at $16. Espárrago Blanco with truffle aioli and cured egg yolk lands at $15, and a rotating, chef-driven Seasonal Paella at market price rounds out the additions. The menu reads like Philadelphia’s seasonal dining scene showing up in full force across the city’s strongest kitchens.

Village Whiskey’s Southern Turn in the Amada and Village Whiskey Update

Village Whiskey’s new dishes lean into Southern-inspired comfort with a focus on shareable plates. The Chicken Fried Steak arrives with beef gravy and arugula salad at $34 — the kind of dish that announces itself from across the bar. Mac and Cheese at $21 can be topped with either buttermilk fried chicken or bourbon-glazed pulled pork, and the House-made Pickles with whipped ricotta and grilled sourdough start at $7. The Blackened Market Fish pairs with duck fat fries and chow-chow tartar sauce at market price. Additional items include Chicken Gumbo with braised chicken thighs and andouille sausage at $21, and Bourbon-Glazed Pork Cheddar Fries at $15.

Amada and Village Whiskey new menu items

Village Whiskey’s happy hour menu also expands with the Amada and Village Whiskey update, adding hot chicken and pulled pork sliders, a Caesar salad, and cocktails including the Orange Line and NY Sour. Both restaurants are open and serving the updated menus now.
