Defiant Coffee Co Brings a Colombian First Roast and an Early 2027 Launch

Defiant Coffee Co roasts in Colombia, works with wholesale partners and plans retail for early 2027, with a lineup of up to eight coffees.

Defiant Coffee Co is bringing a Colombian first roast to market, with wholesale partners already on board and retail planned for early 2027. The coffee and lifestyle brand from Nikisha Bailey and Natalie Carless expects its full lineup by spring 2027, and it has a deep bench of music, media and nonprofit experience behind it.

Defiant Coffee Co: The People Behind It

Bailey was the co-founder and CEO of WinWin Coffee, which the announcement calls Philadelphia’s first Black woman-led coffee brand. WinWin had a storefront in the Spring Garden neighborhood and, by the announcement’s account, became one of the region’s most promising startups, with award-winning products and services. Bailey says she is proud of what the company built.

Before coffee, Bailey spent more than fifteen years in the music business, with leadership roles at Atlantic Records, Artist Partner Group, Universal Music Group and Nvak Collective, and she has served on the boards of nonprofits in music and entertainment. She describes the new venture as a chance to reinvent and build something with friends she has known and respected for years.

Carless is president and executive director of The Defiant Foundation, a 501(c)(3) nonprofit focused on economic empowerment through the arts, entertainment and education. Her background includes more than a decade in television production and studio operations at BET Networks, and she later developed a housewares company, under NPC Enterprises, built around products for modern family households.

Carless is a first-generation American of Jamaican heritage and the mother of two young children, and she says coffee has become part of her daily rhythm. She describes the brand as a heritage-based company, with a long-term goal of one day owning a farm in Jamaica.

Defiant Coffee Co: Sourcing From the Caribbean and African Diaspora

Defiant Coffee Co says it will work directly with producers and source single-origin coffees from across the Caribbean and the African diaspora, including Ethiopia, Kenya, Uganda and some South American countries. The stated aim is a more intentional, equitable supply chain that connects farmers, distribution networks and retail outlets.

Bailey says the company is working with farmers who are marginalized or running smaller operations and haven’t had the same opportunities as larger corporate farms, and that it is actively seeking “hidden gems.” It describes strong roots in Philadelphia and connections across the Philadelphia and New Jersey region.

Defiant Coffee Co: Roasting at Origin in Colombia

The first coffee is Colombian, and Defiant Coffee Co says it will be roasted at origin in Colombia. The company says that approach keeps more of the value with the producers behind the coffee and reflects a commitment to a more equitable coffee industry. It describes a partnership with Geoff Watts, whose career includes Intelligentsia Coffee, and his new venture, Imatana Coffee.

An Ethiopian coffee follows the Colombian one, and Defiant Coffee Co says it plans to grow to about six to eight coffees by spring 2027.

Defiant Coffee Co: The Advisory Board and Steve-O Carless

The launch also forms an advisory board, chaired by Steven “Steve-O” Carless, a music executive, entrepreneur and investor who founded Defiant Records. As chair, he will help guide the company’s growth strategy, partnerships and opportunities across retail, hospitality, consumer products, technology and cultural experiences, according to the announcement.

The announcement credits Carless with seven Grammy Awards and executive roles at Atlantic Records, Def Jam Recordings, Republic Records and Warner Records, where it says he was the company’s first minority President of A&R, Black Music & Associated Labels.

Carless describes Defiant as more than coffee, a philosophy of “building with conviction” and turning authentic ideas into lasting businesses. In the announcement he says the board’s job is to surround the founders’ vision with the relationships, resources and infrastructure to scale it.

Defiant Coffee Co: When You Can Order

The company says its e-commerce and retail launch is planned for early Q1 2027, with the full lineup expected by spring 2027. Wholesale partners, including businesses and restaurants, are already on board.

The Defiant Coffee Co website carries the “Brewed to Be Bold” tagline, an email and phone sign-up and a link to the brand’s Instagram account. Until orders open, there are plenty of places to get a cup across Greater Philadelphia.

Defiant is a bold word to put on a coffee bag. Bailey says it means going against the big producers, and Carless says it means taking risks and “defiantly being yourself.” This team backs the name with a first coffee from Colombia roasted at the source, wholesale partners already in place and an advisory board behind them.

A coffee brand renews its promise every morning, one cup at a time. Bailey and Carless have the experience to keep it, and with early 2027 on the calendar, Philadelphia has a new coffee brand worth rooting for.
