This unique Sunday night offering, available from 4 pm to 9 pm, features a whole roasted pig, expertly prepared and served with a selection of traditional and seasonal accompaniments that elevate the dining experience.

For just $55 per person, you can savor the succulent flavors of the Roast Lechon Dinner, a dish that undergoes a meticulous three-day preparation process. It all begins when the pig arrives at Bolo, where Chef Fuentes and his culinary team immerse it in a zesty sour orange brine, allowing it to marinate for 24 hours. This infusion of flavors sets the stage for the mouthwatering journey to come.

After its flavorful soak, the pig is carefully deboned and generously rubbed with a blend of achiote, oregano, and aromatic spices. The pig rests overnight, building up its rich, savory character. On Sunday mornings, it takes center stage as the star of the evening’s dinner service.

But the Roast Lechon Dinner at Bolo is not just about the pig; it’s a symphony of flavors that come together in a spectacular ensemble.
