Barrel aging a cocktail is a specific method. A spirit-forward drink — no citrus, high alcohol content — is poured into a small charred oak barrel and left to rest. The wood interaction mellows the spirit over days or weeks, drawing vanilla and caramel notes from the barrel’s interior char and rounding the overall flavor in ways that sitting in a glass cannot replicate. Manhattans and Negronis are the natural candidates: their ingredient profiles not only survive time in wood, but they improve with it.

The barrel aging experience evening begins with a welcome cocktail and light bites before Reilly leads a hands-on discussion of the process — technique, timing, what to expect when the barrel is at home.
