The Chef Behind the Hook and Ladder Summer Menu
The menu comes from Executive Chef Edward Hancock, who joined Hotel West & Main this year after nearly eight years leading the culinary team at the Sofitel Philadelphia. Chef Ed’s food story starts early: he grew up on a farm where farm-to-table wasn’t a trend, it was just how things worked, and he was already cooking and experimenting with flavor by age seven. He officially joined kitchen workforces at 14, studied Food Science at Delaware Valley College, and trained at the Philadelphia Restaurant School.
His career has run through some genuinely notable kitchens — Jake’s in Manayunk, where he won the exclusive La Chaine des Rotisseurs dinner of the year and earned three bells from Craig Laban, then Normandy Farm Hotel and Conference Center, where he built out his banquet skills as both Pastry Chef and Executive Chef. At the Sofitel, he became known for insisting on the finest ingredients, including local farm cheeses and produce, and even implemented a rooftop garden and beehive for seasonal honey and produce at the hotel. That same instinct for quality and seasonality now shapes the Hook and Ladder Summer Menu.




Hook & Ladder Sky Bar sits atop a building with real history — the former home of the Washington Fire Company — and the industrial design details throughout still nod to that past, even as the space serves as one of Conshohocken’s most active modern gathering spots.
