The Red Owl Tavern Menu Gets a Refresh Built on In-House Everything

Red Owl Tavern refreshes its menu with a new Bread Service built on a three-year-old sourdough starter, new appetizers and entrées, and an expanded Butcher’s Block sourced from Mid-Atlantic farms.

The Red Owl Tavern menu has been refreshed around a simple idea: make more of it in-house, and source the rest from Mid-Atlantic farms. The Old City restaurant, perched directly across from Independence Hall, is leading the update with a new Bread Service built on a three-year-old sourdough starter, alongside new appetizers, entrées, and an expanded butcher’s selection.

The Organic Sourdough Focaccia ($9) is baked fresh daily from that starter, resulting in a naturally fermented loaf with a crisp exterior and tender crumb. It arrives with house-made cultured butter worked with roasted garlic and preserved tomatoes, and diners can add whipped ricotta, smoked fish dip, or a rotating conserva on top.

What’s New Across the Red Owl Tavern Menu

New appetizers lean into contrast and char: Burrata Toast ($16) pairs Antonio Mozzarella burrata with roasted strawberries and onion agrodolce, while Spicy Charred Broccoli ($15) gets black vinegar and chili crisp, and Smoked Pork Belly ($16) is finished with a Happy Valley Mead sticky cherry glaze. Hamachi Crudo ($21) rounds out the raw side with tomato ponzu and serrano.

On the entrée side, Arctic Char ($32) comes with spring peas and a green garlic beurre blanc, and Paccheri ($26) pairs grass-fed beef bolognese with whipped ricotta. The Butcher’s Block has also grown, adding an 8-ounce Campo Grande Iberico pork flank steak ($32), an 8-ounce wild swordfish steak ($35), and a 10-ounce grass-fed skirt steak ($39), each available with a choice of bordelaise, chimichurri, steak sauce, or green peppercorn jus.

The refreshed menu spotlights a specific list of regional producers throughout, including Origin Milk, Kensington Food Company, Antonio Mozzarella Factory, Eagle Road Farm, Great Meadow Farm, and Norwich Meadows Farm — the kind of sourcing detail that tends to disappear once a restaurant scales, but stays central to how Red Owl has approached its seasonal programming all along.

The setting still does a lot of the work, too. Red Owl’s patio faces Independence Mall, putting diners within view of where the Declaration of Independence was signed while they work through a menu built on Mid-Atlantic ingredients — a pairing of history and place that few Philadelphia restaurants can actually claim. It joins a run of recent Philadelphia menu refreshes leaning further into scratch cooking and local sourcing this season.
